These apricot oatmeal bars ended up being a great snack to have around and they were gone within two days. Since they were pretty simple to make, I’ll have to make some more. Oatmeal Chocolate Chip have always been my preferred cookies, they were definitely something I was unwilling to give up when I became gluten free. These cookies are somehow able to be both crunchy and soft, the perfect combination, and the chocolate adds a nice touch.
